• 4 Overripe Bananas
• 2 Eggs
• 1⁄2 cup Olive Oil
• 1⁄4 cup (Plant-based) Milk
• 2 cups Self-raising Flour

The perfect use of overripe bananas.
•Preheat your oven to 160° C.
•Mash four overripe bananas with a fork and add two eggs, 1⁄2 cup of olive oil, 1⁄4 cup of (plant-based) milk. Mix until well-combined.
•Add two cups of self-raising flour to your mixture and stir well. Make sure to sprinkle some salt and cinnamon to enhance the flavours.
•Add the mixture to a loaf tin and bake for 1 hour and 10 minutes. Poke the thickest part of the loaf with a skewer to check if it is ready.
•The skewer should come out clean. If not, return it to the oven for a further 5 minutes.
•Make this recipe as individual mug cakes! Simply reduce the quantities, as this makes 8-10 servings, divide the mixture between mugs, and microwave on high temperature for 1-2 minutes.
