Fajitas

INGREDIENTS

• 1 Red Onion
• 2 Big Tomatoes
• 1 Red Pepper
• 225g Protein of choice

• 1⁄2 tsp Cumin
• 1⁄2 tsp Smoked Paprika

• 1⁄2 tsp Dried Oregano

• Salt
• Pepper
• 4 Tortillas

TOPPINGS

Make sure to keep your
lettuce stems and put them
in water to propagate a new
plant. Keep it in a sunny
place and change the water
frequently.

STEPS

It is a bit of an ‘everything goes’ recipe, perfect for using up leftover produce!


•Add a good amount of olive oil to a heated pan, 1 diced onion, 2 diced tomatoes and 1 red pepper cut into strips.

•Feel free to add whatever protein you wish, plant-based or otherwise. Mushrooms are also a delicious option.

•Add 1⁄2 tsp ground cumin, 1⁄4 tsp smoked paprika, 1⁄2 tsp dried oregano, salt, and pepper to the mixture.


•When the vegetables are soft, and the protein is cooked, remove the pan from the heat and warm your tortillas according to the package instructions.


•Serve the fajitas with cheese, sour cream, salsa, guacamole or whatever else you wish, and let everyone create their own delicious combinations!
