• 1 Large White Potato
• 1 Tbsp Olive Oil
• 1⁄4 Red Onion
• 1⁄4 Avocado
• Sour Cream
•Preheat your oven at 220°C.
•Clean the potato well, but don’t peel it. Rub olive oil and salt over the outside of the potato and bake it for 20
minutes, then lower the heat to 190°C and bake for a further 45 minutes to 1 hour, or until the skin is crispy and the flesh is soft.
•Carefully remove the potato from the oven and cut down the middle.
•Add whatever toppings you like. Finely sliced red onion, avocado, sour cream, and cheese are delicious options.
•Make sure to season the potato with salt and pepper before serving.
