• 2 Medium-sized White Potatoes
• 4 Tbsp Olive Oil
• Salt
• 1 Onion
• 1 Red Pepper
• 8 Eggs


This quick and easy version of a Spanish Tortilla takes only 20 minutes to cook and all you need are eggs, pota-
toes, and some olive oil!


•To serve four people, grate two medium-sizedwhite potatoes and fry them at medium heat, in about 4 tbsp of olive oil, with a pinch of salt, for 7 minutes. You can also add a finely diced onion and some red pepper in this


•While the potatoes are cooking, whisk 6 eggs, with a pinch of salt, in a separate bowl. When the potato is golden, add the eggs to the pan, turn down the heat, and cover with a lid or plate.

•Cook the omelette for 5 minutes, or until it is well cooked. If you’re feeling confident, you can flip the omelette
onto a plate and then return to the pan to brown the top.
